During the nesting period, waterfowl are faced with exhausting physical demands and constant danger while attempting to propagate their species. The number of ducks and geese that ultimately join the fall flight hinges on the ability of nesting birds to overcome a host of challenges and threats.

The habitats used by waterfowl for nesting vary greatly by species and often among individuals of the same species. Based on their nesting habitat preferences, ducks are grouped into three general categories: upland-nesting species, overwater-nesting species, and cavity-nesting species. Upland-nesting ducks include most of the dabbling ducks such as blue-winged teal, mallards, northern pintails, gadwalls, and American wigeon. Overwater nesters consist primarily of diving ducks like redheads, canvasbacks, greater scaup, and ring-necked ducks. And cavity-nesting waterfowl comprise species such as wood ducks, buffleheads, common goldeneyes, and hooded mergansers. In some cases, certain species will nest in more than one habitat type and thus cannot be easily placed in a single category. Mallards, for example, are generally considered to be an upland-nesting species, but are known to nest in a variety of locations, including in overwater vegetation, trees, artificial nesting structures, and even the occasional backyard flower pot.

After a hen selects a nesting site, her next task is to create what is known as a nest bowl. Upland nesters often make a shallow depression in the ground called a scrape. Cavity-nesting species make their nests in recessed locations, usually in holes in dead and decaying trees as well as in artificial nest boxes. Overwater nesters typically build their nests in flooded cattails, bulrushes, or willows and on floating mats of woven vegetation.

Cooking Time: 15 minutes 
Serves: 4

Ingredients


  •  4 goose breast fillets or 6  Arkansas Duck breast, skin on or off
  • 1 medium red onion, cut into 1/4-inch-thick rings
  • 1 bell pepper, any color, cut into
  • 1/4-inch-thick rings
  • 1 jalapeño pepper, seeds removed and thinly sliced
  • 1/3 cup tequila (or substitute orange juice)
  • 1/4 cup fresh lime juice
  • 1/4 cup vegetable oil
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon salt
  • salsa
  • warm flour tortillas
  • lime wedges
1. Place goose breast fillets in a shallow plastic or glass container. Arrange red onion, bell pepper, and jalapeño over goose. In a bowl, combine tequila with the next seven ingredients and mix well. Pour mixture over goose, onions, and peppers. Cover and refrigerate for 4 to 6 hours, turning often.

2. Pour off and discard marinade. Heat a large, heavy skillet over medium heat. Add goose and brown evenly on both sides, about 3 to 4 minutes each side. Add onions and peppers, and cook until onions are translucent.

3. Remove goose breast when still medium-rare. Allow to rest for a few minutes and then slice thinly across the grain of the meat. Arrange sliced meat on plates, top with onions and peppers, and serve with salsa, tortillas, and lime wedges.

Cook for 6 to 8 hours on high, this will depend on how hot your crock pot cooks. When the meat starts to break apart it is done.
To serve place the meat on your favorite tortilla and then add cheese, lettuce, tomatoes, salsa etc.... or what ever you may like on your Fajitas.



Ingredients:
1 - small can of chipotle peppers
1 - small can of green chili's
Garlic salt to taste
Black Pepper to taste

Domestic ducks typically serve two to four. As for wild birds, a mallard, canvasback, redhead, gadwall or pintail will serve two (if you have other things on the plate), a goose four and a wood duck, bluebill, wigeon, ringneck or teal one.

 Serves 4.

 Prep Time: 30 minutes, mostly rest time

Cook Time: 1 hour

  • 1 domesticated duck or 2 very fat wild ducks (see above for species variations)
  • 1 tablespoon kosher salt
  • 1 lemon, cut in half
  • 4 sprigs sage, rosemary, parsley and/or thyme

  1. Preheat oven to 350°F. Take the ducks out of the fridge. Using a needle or a very sharp knife point, prick the skin of the duck all over — but be sure to not pierce the meat itself, only the skin. This helps the fat render out and will help crisp the skin. Pay special attention to the back, the flanks, and the very front of the breast.
  2. Rub the lemon all over the duck and stick it inside the cavity. Liberally salt the bird; use a little more salt than you think you need. Stuff the cavity with the herbs. Let the duck sit out for about 30 minutes to come to room temperature.
  3. When you are ready to roast, put the duck on an iron frying pan or other ovenproof pan and surround it with root vegetables. Set the pan in the oven. Cook domesticated ducks for 1 hour like this. Cook large wild ducks like mallards and pintails for 45 minutes. Small ducks (wood ducks, wigeon, teal, ruddies, etc.) only need 40 minutes. If you are roasting a goose, increase the roasting time to 1 hour, 20 minutes. After the allotted time, take the pan out of the oven and set the ducks on a cutting board to rest. Spoon any fat that has accumulated over the vegetables and salt them well. If the veggies are ready to eat, remove them. If there is a lot of excess fat, spoon it off.
  4. Now turn the heat up to 450°F. When the oven hits this temperature, roast the birds for 15 to 20 more minutes, or until the skin is crisp. The reason you take the bird out of the oven is because a) the resting time helps redistribute the juices in the bird midstream, and b) you are crisping skin without totally overcooking the duck by only returning it to the oven when it is hot.
  5. Remove from oven and let the birds rest. You’ll only need 5 minutes resting time for small birds, 10 minutes for large ducks, and 15 for geese.

]]><![CDATA[WATERFOWL NUMBERS UP 8% 2014]]>Tue, 29 Jul 2014 15:50:47 GMThttp://www.arkansasduckhunting.co/arkansas-duck-hunts-blog/waterfowl-numbers-up-8-2014The US Fish and Wildlife Service today released its report on 2014 Trends in Duck Breeding Populations, based on surveys conducted in May and early June. Total populations were estimated at 49.2 million breeding ducks in the surveyed area. This estimate represents an 8-percent increase from last year’s estimate of 45.6 million birds, and is 43 percent higher than the 1955-2013 long-term average. This continues a three-year trend of exceptional water conditions and population numbers for many species. It looks like another good waterfowl breeding year for a good portion of the prairies and the boreal forest," said DU CEO Dale Hall. "Precipitation in the form of snow and rain has provided sufficient water to fill important wetlands in key breeding habitats. We hope this will result in good production and another great flight of birds migrating in the fall. DU and its partners continue to work hard to protect and restore habitat to provide for the needs of these birds and so much more. While we still have much work to do in delivering habitat and securing key conservation policies for sustaining these populations, we are heartened by the good results we have seen in the past few years.”

The main determining factor for duck breeding success is wetland and upland habitat conditions in the key breeding landscapes of the prairies and the boreal forest. Conditions observed across the U.S. and Canadian survey areas during the 2014 breeding population survey were improved or similar to last year. Total pond counts for the U.S. and Canada combined showed 7.2 million ponds, which is similar to the 2013 estimate and 40 percent above the long-term average.

"Reports from DU biologists indicate a strong breeding effort across the prairies," said DU Chief Conservation Officer Paul Schmidt. "This is despite late winter conditions that delayed nesting activity in some areas by one to two weeks. We need more moisture in the Western Boreal Forest and in parts of southern Alberta and Saskatchewan, and higher-than-usual water levels have posed some challenges for nesters in the Eastern Region. But overall this is a good breeding season, and depending on local conditions hunters across North America should look forward to another strong fall flight."
